天津"狗不理"包子 Tianjin "Goubuli" Steamed Stuffed Buns
"狗不理"包子号称天津三绝之一,享誉中外,至今已有百余年的历史。天津人说,到天津如果没吃过"狗不理",就等于没来。关于"狗不理"包子的来历,据说还有一个小故事。"Goubuli" steamed stuffed bun is one of the three special foods in Tianjin with a history of over one hundred years, which is well-known both home and abroad. The local people said that he who hadn't tasted Goubuli cannot proclaim he has been to Tianjin. There is an interesting anecdote about the origin of Goubuli steamed stuffed buns. 清朝的时候河北有一户农家,男主人四十岁才得了一个儿子,取名叫高贵有。为求平安,父母给他起了个小名叫"狗子"。高贵有14岁时,家里太穷了,父母就把他送到天津一家饭馆里学做包子。他勤奋、好学,三年学徒期满便在附近开了个店卖包子。高贵有有一手做包子的好手艺。在天津,他最早用骨头汤做馅,最早用米发面做包子。他做出来的包子大小整齐,色白面柔,咬开流油,肥而不腻,味道鲜美,受到人们的一致称赞。顾客喜欢叫他的小名"狗子",有时候跟他打招呼,他都顾不上理,因为来吃包子的人太多了。时间长了,人们就说"狗子不理人",后来就叫他"狗不理"了,他卖的包子自然就叫"狗不理包子"了。二十多岁时,高贵有羞于再用"狗不理"这个名字做铺号,曾改为"德聚号",可是人们仍然喜欢叫他的铺号为"狗不理"。n the Qing Dynasty, a peasant in Hebei province got his first son when he was as old as 40. He named the boy Gao Guiyou and also gave him a pet name "Gouzi" (doggie) for protection and good fortune. The family was poor and when Gouzi was 14 years old, he was sent to study how to make steamed stuffed buns in a restaurant in Tianjin. He was diligent and studious and managed to open his own snack shop nearby after three years' apprenticeship. Gao Guiyou was quite good at making steamed stuffed buns. In Tianjin, he was the first to add bone broth into the stuffing and use rice flour to make dough. His steamed stuffed buns were neat in size, white in color, soft and full of grease. The stuffing was delicious without being oily, thus popular among all the customers. People liked to call him Gouzi (doggie). When he was busy, he had no time to greet others. Gradually, people complained by saying that "狗子不理人" (Gaozi ignores us.) and in a long run, his name was changed to "Goubuli" (short for "Gaozi ignores us.") and his buns were called "Goubuli" steamed stuffed buns. When he was in his 20s, he felt ashamed to continue use "Goubuli" as his shop name and changed it to "Dejuhao" (gathering virtue). However, people were still used to use the name of "Goubuli".
