soyburgers that you asked me for in your e-mail last night:
Cook 5 cups of soy beans in a pressure cooker for about 45 minutes. Drain the cooked beans in a strainer. Mash the beans with a potato masher and add while mashing:
2 tsps. salt
3/4-1 cup whole wheat flour
1/2 tsp. pepper
1 tbsp.
garlic powder
2 tsps. oregano
1 tsp. basil
1 onion,
finely chopped
1 green pepper,
finely chopped
Mix well. The mix should be quite stiff. To make patties, roll mix into a small ball, a little larger than a golf ball. Then
flatten the ball to 1/2 inch thick. Fry in a generous amount of oil, so they'll be crisp. Makes 16 soyburgers.
